It doesn't say it's the only action you can take during your whole turn. It says it's the only action you can take during your turn while you have the card/token.
The first action removes the card/token, thus you no longer have the card/token and then can use a second action.
The errata just clarifies this.
Any figure that begins its turn stunned must spend its first action to remove the stunned condition, but then it is able to take a second action.
Any figure that is stunned while taking the first action on its activation can use its second action to remove the stun.
In short... the stunned condition makes the affected figure lose 1 action to remove it, and it must be the very next action they have available, or instead of removing it, a figure can simply choose to not take any actions whatsoever. A figure can't do one action while stunned, then do another to remove the stun. The figure must remove stun before they can perform any other actions.
Also, something to note is that a figure can use abilities that are not actions.
